MAPLE-GINGER SWEET POTATOES
Ingriedients
1 1/2 LBS sweet potatoes, peeled and cut into bite size pieces (about 5 cups)
2 medium tart cooking apples, cored and chopped
1/4 cup dried cranberries
1 1/2 TSPN fresh ginger
1/2 TSPN salt
1/2 TSPN cinnamon
1/4 TSPN nutmeg
1/8 TSPN black pepper
1/2 Cup Water
1/4 Cup Maple Syrup
Directions
1. In a slow cooker, combine sweet potatoes, apples, dried cranberries. ginger, salt, cinnamon, nutmeg, and pepper. Pour the water and syrup over the top.
2. Cover and cook on low-heat setting for 5 to 6 hours or on a high setting for 2 1/2 to 3 hours.

Sweet potatoes are about the only vege Kaelin will eat now...thanks for the recipe!!

I'm not a big sweet potato fan, but my parents are- I will have to pass this on to then --they will enjoy it!
